We'll make pastry cream, crème anglaise, ice cream and ganache to fill and ice our creations. Fresh Pasta

Fresh pasta is simple with a delicate flavor and texture that is unlike dried pastas. Learn how to make it at home with a simple hand-powered pasta machine. We will make a variety of types, including a spinach dough, an herb dough and a red dough. These can all be made into a variety of pastas, including spaghetti, ravioli, fettuccine and vermicelli. Pleasures of Piedmont: A Northern Italian Meal
Tuesday, October 7th, 6:15pm-8:45pm

Join Chef Anne Cornell for a night of cooking and eating from her favorite Northern Italian food region of Piedmont. We will highlight white truffles, using truffle oil and Barolo, the full-bodied red wine found in Piedmont, as well as polenta, which is much used in Northern Italian cooking. Ice Creams and Sorbets
Thursday, August 28th, 6:15pm-8:45pm

In this class we'll learn how to create those summer-time classics, ice cream and sorbet. We'll start with a simple vanilla ice cream, and follow with countless variations. Along the way we'll learn to master a variety of cooking techniques including scalding cream, tempering eggs into scalded cream, and creating simple syrups. Chef Amy will also use her extensive knowledge of vegan desserts to show us unique flavors and styles of sorbets; these include herb and spice sorbets, fresh and cooked fruit sorbets, and even a 10-minute sorbet.


The Cheese Course
Monday, August 25th, 6:15pm-8:45pm

The unique and complex flavors of cheeses can be accentuated and elevated in a variety of ways. Learn about the different kinds of cheeses, and how to best enjoy them. In this course we will cover plating, pairings with foods and wine, and how to make some cheesy accompaniments. We'll make Baked Brie and Puff Pastry, Goat Cheese and Fig Crostinis, and sample local and international cheese platters.


Advanced Knife Skills: Whole Chicken
Thursday, August 7th, 6:15pm-8:45pm

Cutting up a whole chicken at home allows you to minimize waste and save at the market. Join Chef Jeremy Moran as he shows us how to separate the bones, halve the chicken, and more -- all while using a knife you probably already own: your chefs knife. Advanced Cake and Cupcake Decorating

Are you comfortable with a pastry bag, but looking to expand your repertoire? Have you been intrigued by the wide variety of pastry tips available? In this hands-on class you'll learn some advanced piping techniques that'll let you create a whole garden on your next cake or cupcakes. You'll start off learning how to use basketweave and grass tips. Next you'll practice leaves, and then finally, roses.
