Ice Creams and Sorbets Class

In this class we'll learn how to create those summer-time classics, ice cream and sorbet. We'll start with a simple vanilla ice cream, and follow with countless variations. Along the way we'll learn to master a variety of cooking techniques including scalding cream, tempering eggs into scalded cream, and creating simple syrups. Chef Amy will also use her extensive knowledge of vegan desserts to show us unique flavors and styles of sorbets; these include herb and spice sorbets, fresh and cooked fruit sorbets, and even a 10-minute sorbet.

At Katherine Michiels School, 1335 Guerrero Street, San Francisco, CA 94110 (at 25th)

About Your Teacher

Chef Amy Pearce will be teaching this class. Often found at the heels of her Mom in the kitchen, Amy had her hands in the batter at a young age. She followed her vegetarian side to New York to attend the Natural Gourmet Cookery School. There she lived as a private chef and did her internship at Union Square Cafe. Following the local abundance of produce in California she landed in San Francisco. As Pastry Chef at Millennium Restaurant she mastered her worldly style and co-wrote The Artful Vegan. Also in her west coast experience are stints at One Market Restaurant, Acquerello, Paula le Duc Fine Catering, and the St. Regis Hotel.
